La Chispería. The gastronomic rebirth at Chamberí’s Market.

Classics renewed without losing its essence is something that seems to me top . Surely you too. And one of those rare cases takes place in the Mercado de Chamberí with La Chispería . I’ll explain why. I lived just 5 minutes walk from Market Chamberí for several years , shopping there often and even enrolled in the gym upstairs. There I learned how to know if a pineapple is just right, watching the gills of fish to see if it cool …

Those who make purchases in markets are professionals, and you can learn a lot from them if you stretch your ear.

Gradually the Chamberi neighborhood has changed. Not many years ago at Ponzano Street were the Sylkar , Alipio Ramos and two or three more bars, with fixed clientele. Now, it’ss one of the streets with more bars of Madrid and the best gastronomic quality with new additions such as Le Qualité , Sala de Despiece or Lambuzo.

At Mercado de Chamberí has changed in the same way. Lifelong stalls are still maintained , but it has been a small revolution: The Chispería . A gastronomic space with 6 new proposals. Chambi, which is the street food version of Tiradito & Pisco Bar, with Peruvian sandwiches and buns Asian and Valona, with its Mexican style. The port cuisine of El Loco Antonelli and Cadiz style with Lambuzo. Ending, opposite poles that attract themselves : Food Labs with its cutting-edge proposals BBQ ribs and El Rincón de la Lupe with its traditional food made with the products of the market.

Is not like Mercado de San Miguel that has only gourmet stalls. Here you can go shopping and eating, all in the same place. And there’s free parking for guests in the back of the market.
