Today we are going to reveal our big secret; Sylkar Tortilla is our choice as the best Spanish omelette Madrid. This is fact. Andrea, Monica and Victoria demonstrate every day in this Chamberí bar how to prepare an omelet that makes his followers go on a pilgrimage to from every corner of the capital.

The place is small and decorated with real “vintage”. Downstairs barely fit a few tables arranged in parallel to the bar and upstairs there is a lounge with a little more room. In the window of his small facade it’s shown the prizes won in tortilla contests and some of the many reviews that media have already dedicated.
The food is homemade and one can see the difference, so if you’re dieting ask yourself skip it for a day. In the bar they have several rations: ali-oli potatoes, sausages, pickled anchovies, etc.. but it’s difficult to see potato tortillas, because nothing else coming out of the kitchen goes to any customer willing to eat. They have also more elaborate and filling dishes, like tripe or oxtail, what it’s preferable to eat quietly in the dining room upstairs.

Even bearing in its menu all these dishes so “castizo”, the real Sylkar attraction is the Spanish omelette. Very juicy and slightly curdled. There is no way to serve it and doesn’t dismantle itself a bit, but that’s not important. Potato and onion have almost the same consistency, and that makes it very tasty. When you see it you always have in mind how they could get around, but when you start eating you can only think of how good it is. We ordered half omelette for two and a pair of Mahou’s beers. Do you need more reasons?
